Gambero Rosso awards '3 Bacchette' to the best Sushi Restaurants in Sicily

The new edition of the Sushi Guide 2025 of Gambero Rosso celebrates the iconic dish of Japanese culinary culture that has conquered palates all over the world, including Sicily. This publication illustrates the gastronomic universe of sushi, rewarding sushi bars, fusion, fine dining, osterie, take-away and delivery establishments throughout Italy. As many as seven Sicilian establishments were awarded the 'Bacchette', the recognition that distinguishes the best sushi proposals. Among these, one was awarded the 'Three Wands', the highest score in the category.

The restaurant Hio Sushilab in Palermo has won the prestigious Three Wands award, distinguishing itself as the best sushi restaurant on the island. This restaurant offers an impeccable culinary experience, thanks to the refinement of its ingredients and its focus on Japanese culture. Hio Sushilab surprises with a fusion cuisine that enhances the flavours of the Rising Sun, mixing them with those of Sicily, making sushi a little more Sicilian. According to the Gambero Rosso Sushi Guide, sashimi and nigiri are prepared with correct cuts and appropriate sizes, offering a balanced mix of flavours. Notable uramaki include one with salmon and prawns, enriched with mango, lemon zest, tobiko, yuzu and ponzu sauce reduction. The dining experience is further enhanced by the wine cellar, rich in variety and quality, and the courteous and punctual service.
