Fennel and Orange salad

Orange and fennel salad is a typical dish from Sicily, a sun-kissed land famous for its sweet and juicy oranges! Although fennel and orange may seem an unusual combination, these ingredients blend perfectly in an exquisite Mediterranean harmony.

Ingredients

  • Fennel 400 g
  • Oranges 600 g
  • Fresh spring onions 200 g
  • Pepper q.b.
  • Salt q.b.
  • Sicilian black olives

Preparation

To prepare the fennel and orange salad, start by peeling an orange until the segments are peeled free of zest and white parts. With the blade of a small knife, remove the peel and the white part of the citrus fruit. Extract each clove, cutting from the outside towards the centre of the orange, close to the white membranes. Then, squeeze the juice from the other orange.

Combine the orange juice with the extra virgin olive oil and salt, and beat everything with a fork to create the emulsion for seasoning. Wash and chop the fennel, removing the green ends and the tough central part. Place them in a salad bowl.

Add the peeled orange slices and pour on the prepared seasoning. Finally, add the pitted black olives and mix all the ingredients well.
